As temperatures soar in the summer you may want to think about chilling your red wine. We all know that chilling white wine benefits the flavours by bringing out the acids and fruitiness.
Typically we serve red wine at room temperature, but remember room temperature is about 20C. The warmer temperature for red wine brings out the rich flavours and reduces the tannins, making the wine smoother.
When temperatures soar, you might find your red wine starts to taste too-alcoholic as the alcohol volatilizes. By chilling the red wine you will bring out the tasty natural acids in the red wine and dull the alcohol taste. It will also bring out the fruit characteristics of the red wine. This is particular true for wines such as Zinfandel, Pinot Noir, Barbera, Shiraz and Grenache. So, pop that red in the fridge for 5-15 minutes before serving, and taste the difference.
